It’s been a long day at work, you just got home, and you don’t know what to eat. The frozen pizza is calling your name…, No, don’t do it. We have just the thing for a quick delicious and healthy meal. It’s called Quickie Black Bean Dip Taco’s. Yep you heard me, quick, black beans, taco’s, what could be better. So here you go you Lazy Guy or Gal…
1 can black beans
Jar of salsa
Spinach (frozen or fresh)
Tortilla’s (corn are my favorites…but you do you…whatever is your favorite, corn, flour, maybe even flat bread or some nice Lavash roll ups from Costco…who knows, this is YOUR dinner)
Onions - red, yellow, white - you choose
Avocado or guacamole
Go crazy and add what you like.
How to prepare
Drain and rinse the black beans into a bowl. Mash those suckers--with a potato masher or a fork - mash them up good. Add some salsa—as much or as little as you want. Mix this together, maybe even add some cumin or smoked paprika. Now this can be heated up in the microwave or eat it at room temperature.
Next cut some onion, some mushroom, add frozen corn and/or spinach - a little or a lot it all depends on your tastes - toss it into a pan and saute briefly (~2 minutes). While that is cooking chop up some avocado, cilantro, fresh spinach (if not using frozen) and anything else you would like on your taco.
Lay out the tortillas and spread the black bean dip on the tortilla, fill with all of your yummy ingredients and then go stream another season of “Orange is the New Black” or “Game of Thrones”. Whatever you need to do to relax, to do you—because, dinner is prepared and healthy. Crisis averted.
