Delicious and filling for a winter's day. Tons of fiber, vitamins and nutrients. Anti-cancer and anti-inflammatory. Great for the immune system. Here's the recipe: 4 Yukon potatoes, chopped; 4 carrots, sliced; 1 onion, diced; 1 bag frozen regular or blackened corn; 1 red pepper, diced; 5 cups H20; 1 bay leaf; 1/4 tsp thyme; pinch cayenne. Place all in Instant Pot set for 5 minutes with quick release; remove bay leaf; blend 1/2 soup mixture and add back into soup for creaminess. For stove top: cook all in large soup pot until potatoes and veggies are tender. Follow same after cooking directions as for Instant Pot. Slurp, slurp, yum.
